Chickpea and Mushroom Curry

Ingredients

2 large field mushrooms

1 tin of chickpeas (drained and vaguely rinsed)

Curry Powder

Veg Stock (optional)

1 packet of "Cream of Something" instant soup

couscous (to hunger)

Boiling water

 

Method

  1. break mushrooms up and put in a bowl with the chickpeas
  2. add curry powder to taste (veg stock to taste as well - depends on how much salt you want really!)
  3. add boiling water - say about 75% of the bowlfull?
  4. microwave for 2 mins
  5. add soup and couscous
  6. microwave 2 mins
  7. leave to rest untill couscous how you like it

 

Notes 

  1. Yes I did eat a whole large tin of chickpeas but I have had a whoppa of a friday swim.
  2. You might need to add more water later on - depends gloop vs soup requirement
  3. Be more organised and bring fresh coriander and some red-pepper to add at end
